Recipes for Real Results: Spinach & Leek Frittata

This is so good and packed with protein! It has a delicious Greek flavor and I serve it with a mixed greens salad topped with balsamic vinegar and a piece of crusty whole-grain bread. Yummy!!
Spinach & Leek Frittata

  • 6 eggs
  • 1 tablespoon water
  • 1 bunch spinach, finely chopped
  • 2 tablespoons olive oil
  • 1 leek, coarsely chopped
  • 3 minced garlic cloves
  • 1/3 cup crumbled feta - I love the tomato & herb feta
  • squeeze of fresh lemon juice
  • sprinkle of salt

Preheat broiler. Beat eggs with water and add the chopped spinach to the egg mixture. In a medium skillet, add olive oil and leeks, sauté 3 minutes add the garlic and sauté another minute. Add the spinach-egg mixture all at once and cook over medium heat until almost done, about 7-10minutes. While the top is still very soft, sprinkle with cheese and put under the broiler until done, about 5 minutes. Season with a squeeze of lemon and a tiny pinch of salt and serve warm. Serves 4-6.

Per serving: 172 calories, 17g protein, 3g carbohydrates, 2g dietary fiber, 8.5g total fat, 1.5g saturated fat, 77mg sodium.

I'm gonna have to ask my wife to make this one night soon. I love the recipes keep them coming. I get asked all of the time for different ideas when it comes to great protein packed meals and this looks like a great one for people.
